Slow Cooker Sunday: Apricot Chicken
I know I have been on a chicken kick lately, but we only have two more weeks of the Biggest Loser at work (and thus, weigh in's on Mondays) so I will try to branch out in a few weeks. :-) However, when your husband turns up his plate so he can lick off the remaining juices, you know you have found a winner. This was such a yummy chicken recipe. We both really enjoyed it this evening. Sorry no pictures. It disappeared before I had the chance. :-) Apricot Chicken Ingredients: 11 oz. jar apricot preserves 1 tsp. dried minced onion flakes 1 Tbs. dijon mustard 1 Tbs. soy sauce 1/4 tsp. ginger 6 boneless chicken breasts or thighs Directions: 1. Drop chicken in the crock pot. 2. Mix all the ingredients together in a small bowl. 3. Pour mixture on top of chicken. 4. Cook on high for 4-6 hours or low for 6-8 hours.
