Slow Cooker Sunday: Chicken Provencal
There is supposed to be a little tail coming off the bottom of the "c" in Provencal, but y'all get the idea. Basically fancy chicken. :-) It was a yummy Sunday night dinner, and the fact that it is healthy is a great bonus. Chicken Provencal Ingredients: 2 pounds boneless chicken, cut into quarters 2 medium red peppers, cut into 1/4 inch thick slices 1 medium yellow pepper, cut into 1/4 inch thick slices 1 onion, thinly sliced 1 can (28 ounces) of plum tomatoes, drained 3 cloves of garlic, minced 1/4 teaspoon salt 1/4 teaspoon dried thyme 3 strips of orange peel *It also called for 1/4 teaspoon of crushed fennel seeds and 1/2 cup of fresh basil (chopped), but I don't like either so I left it out. Directions: Place all ingredients in crock pot and mix thoroughly. Cover and cook on low 7-9 hours or high 3-4 hours. To serve, sprinkle with basil (if you happen to like basil).
