Slow Cooker Sunday: Peanut Butter Chicken

Peanut Butter Chicken

Ingredients:
1.5 pounds boneless, skinless chicken breasts (cut in chunks)
1/2 cup peanut butter (any kind)
1 red pepper (seeded and sliced)
1 Tbs cumin
1/4 cup soy sauce
1 lime (squeezed)
1 large onion (chopped)
1/2 cup chicken broth

Directions:
Place chicken in crock pot and cover with peanut butter.
Add peppers and onions and cumin on top.
Squeeze lime over everything.
Pour in soy sauce and chicken broth and cover.
Cook on high 4 hours.
Serve over white rice or quinoa.

We gave this meal an "aight." It was a "stir fry type" meal so it went well served over white rice. And I have been a big fan of the microwave Uncle Ben's white rice packets. 90 seconds and done. Bam. Chad didn't like the cumin flavor, but I thought all the ingredients complimented each other very well. It was good...not my favorite crock pot meal...but good. If you like Thai Peanut Chicken Sauce, you will like this (though it's not spicy at all).
